Two for Tea Biscuits
Once upon a long, long time ago, there was a girl (that girl was me) who moved to England and fell in love—not in love with a person or the country itself, rather she fell in love with a biscuit. This biscuit was crumbly and sweet, but not too sweet, and sometimes it would come dipped in dark or milk chocolate.
Fast forward a few (okay, 20 or so) years and the girl is now shacked up with a boy who also loves these types of biscuits. Almost every night after dinner, the two of them happily put the kettle on and make a cuppa tea to drink while they watch English Murder Mystery shows before bed. Their tea always tastes better with biscuits, but a few days ago, they found that they’d run out! What was to be done? There were only two options to solve this first-world problem: they could either order more English biscuits or they could learn to bake their own. The girl chose the latter option. And here is how she made her own Oaty Digestive Tea for Two Biscuits.
Here’s What You’ll Need:
1 ½ Cups All-Purpose Flour
1 ½ Cups Old-Fashioned Dry Oats
1 ½ Teaspoons Baking Soda
1 ½ Teaspoons Salt
1 Cup of Butter (at room temperature)
1 Cup of Sugar
2 Tablespoons of Milk (preferably whole milk)
2 Teaspoons of Honey
A dash of Cinnamon
Here’s How to Make Them:
Step 1: Preheat your oven to 300 degrees and prep a few baking sheets, greasing them with butter or non-stick spray.
Step 2: In a food processor or using a pastry cutter, because you don’t have a food processor (ahem), blend the flour, oats, baking soda, and salt until it has a coarse, rough texture.
Step 3: In a KitchenAid or a mixing bowl with a hand mixer, cream together the butter and sugar.
Step 4: Add your dry ingredients to the butter mixture and combine together until just blended.
Step 5: Add the milk, honey, and cinnamon and mix again.
Step 6: Once all mixed up, scoop the dough out onto the cookie sheets. Flatten your cookies a little to encourage them to spread out in the oven.
Step 7: Bake for 30 minutes.
Step 8: Cool your cookies on a wire cooling rack until they get nice and crispy.
Step 9: Enjoy with tea and an English Murder Mystery show of your choice.
